If you're looking for an evening of fine dining with immaculate service, this place is a good choice.
As it's a place that has been there for decades as a high end restaurant. I've been watching it to see if it will evolve. This is because we've seen how other similar style restaurants let their stalemate food and service lead them to their own demise (eg. William Tell). Hy's has consistently been the trusty establishment.
Sure, it's dark and has the old school look, but the service was quite pleasant. It's been quite a while for me since my last visit. And so I wasn't familiar with the menu which they have updated. But don't go looking for any modern or fusion dish. It's still about the steak.
If you're there, you splurge. At least go for the prime grade steaks aged 28 days. They are so tender and tasty.
The Chateaubriand for two that's served table side is a good show if you want to impress out of town guests or your soul mate.
If not, then go for the banana foster. Perfectly complemented with butter, brown sugar, and orange juice, when flambeed with rum, this dessert goes down with perfection with vanilla ice cream. -

Vancouver is a steak-deprived city, a point most acutely understood by visiting its flagship steakhouse. Hy's didn't exactly give the impression of a restaurant that's trying.
I ordered their daily special for dinner: a 16 oz ribeye with prawns and a veggie-potato mix. The steak was embarassingly thin and over-charred, with kind of a metallic taste. The prawns were over-cooked to the point of being dry and chewy. And the veggies were something you could get from a frozen mix.
At least the house classic starters of ceasar salad and cheese toast were tasty.
Ok, so what about the pomp and ceremony? Surely they must nail the extra-culinary aspects of dining, at these prices? Nope. During the tableside ceasar salad prep, a lemon got launched at my grandma. When my steak arrived, the plate was literally dropped on top of the fork I had placed to the side. The washroom soap came out of a cheapo disposable dispenser from Costco.
This places gets 2 stars instead of 1 because I had a decent NY steak at lunch here recently, but I can't discourage the dinner service strongly enough. -

By far one of the best steaks I have had. I had came here with 2 other friends and we shared the 30 oz. Steak special. We ordered it charred and rare. In between we had caramalized onions, mashed potatoes and another vegetable dish. Literally, the steak was one the best steaks I have every had. In the past they also used to have the best yorkshire pudding I have had but that has been taken off the menu to a lot of people's disappointment. This place is really interesting and the only place where I have seen the servers wear labcoats. I wonder if that was a reflection of the 60's. Regardless I cannot stress the charred medium steak here. It was Amazing!

A fancy steakhouse located in DT Vancouver. Environment is not very quiet. Tried its famous dry aged Canadian beef steak, and I promise that as always, beef in Canada is better than America!
